Overview
Dissolved in water, SMBS forms bisulphite, which reacts quickly with chlorine and oxygen. That makes it the standard dechlorinating agent ahead of reverse-osmosis membranes and a common oxygen scavenger.
In food it is the preservative and antioxidant E223, used in wine, dried fruit and juices. It is a white crystalline powder supplied in technical, food and photo grades.
